Indulged myself in all their local foods and produce and never felt so healthy in all my life. Having suffered with a digestive disorder for 10 years, I was a little apprehensive as to how I would tolerate the Japanese cuisine. Hi Nami, I would love if you could teach me how to use my bonito shaver correcty. I got one a while ago and it’s a lot more difficult to use that I expected. All I get is bonito sawdust when I try shaving the block!!! I have used the katsuobushi sawdust to make dashi broth and is tasted good but I’m sure the dusty shavings are not ideal. I want to avoid using powdered dashi. I have often bought ready shaved katsuobushi but often find them so smokey. I would be so grateful for any advice.
